Who loves pancakes?
I mean, who doesn’t?
My kids love them so I’ve decided if we are going to eat them all the time, they need to be healthier! Luckily I found the most amazing recipe that my friend Jess Fortin from Maddy Grace Skin Care shared in my Facebook group Coco Collective. So back to the pancakes…these are so tasty, easy and my girls love them. Best thing about them? You don’t even need to add maple syrup! They have vanilla extract and cinnamon for a lovely sweet flavor! And you can throw in spinach, which makes them green and is a very good source of dietary fiber (we call them Monster Pancakes in our house).

Here’s the recipe!
1/2 old fashioned oats
2 eggs (or flax eggs if vegan)
1/2 tsp baking powder
1 cup spinach
Cinnamon and vanilla extract
Blend and cook like a pancake! They will brown on the top and bottom and they taste delicious!
Another idea is to spread them with almond butter for an added protein punch!
